Homemade Gulkand: Gulkand is a cooling tonic used in Unani medicine and is thought to have Indo-Persian origins. Gulkand is traditionally made using Damask roses, though China, French, and Cabbage roses are also frequently used.
There are many advantages to using this petal jam, including relief from acidity, headaches, lethargy, fatigue, constipation, bloating, period spotting, PCOS, acne marks, itchy scalp, sugar cravings, and inconsistent sleep. Additionally, making it at home is quite simple.
You’ll Need
100g of Rose petals
4 tbsp of white sugar
2 tsp of Fennel seeds
1 tsp of cardamom
1 tbsp of Honey
Instructions:
- Rinse the rose petals thoroughly with water to remove any dirt or impurities. Pat them dry using a paper towel or a clean cloth.
- In a mixing bowl, add the rose petals and powdered sugar. Mix them well until the petals are coated with sugar. Cover the bowl and let it sit overnight or for about 8-10 hours. This process helps to release the natural juices from the rose petals.
- After the resting period, you will notice that the rose petals have released their juices and have become soft and slightly wilted. Now, transfer this mixture to a blender or a food processor.
- Add the rose water and cardamom powder to the blender or food processor. Blend the mixture until it becomes a smooth paste-like consistency. You may need to scrape down the sides of the blender or food processor a few times to ensure even blending.
- Once you have a smooth paste, transfer it to a clean glass jar with an airtight lid. Make sure the jar is sterilized and completely dry before adding the Gulkand.
- Close the lid tightly and store the Gulkand jar in a cool, dry place away from direct sunlight. Allow it to mature for at least 2 weeks, although longer is better. During this time, the flavors will develop and the Gulkand will become richer and more fragrant.
- After the maturing period, your homemade Gulkand is ready to be enjoyed! You can consume it directly as a sweet jam or use it as an ingredient in various Indian desserts and recipes.
Note: Remember to use clean and dry spoons whenever you take out Gulkand from the jar to avoid any contamination. Also, make sure to keep the jar tightly sealed when not in use to preserve its freshness.
